You might know the light, fizzy Txakoli from a jaunt to San Sebastian, where the servers pour the wine from height into your glass.
This isn't it.
It is a still wine made from the same grape - Hondarrabi Zuri - in the same Basque region. It's like drinking electric peaches on rocks.
Bodegas Itsasmendi own some bucolic, verdant vineyards in the Urdaibai Bioshphere Reserve - not far from Bilbao.
