Sherry, but not as you might think of it. This is made from Moscatel (not the usual Palomino grape) and the grapes are late-harvested. They are allowed to spontaneously ferment in cement vats and then the fermentation is stopped using a neutral grain spirit, a similar process to southern French vin doux naturel pudding wines. The spirit stops all of the sugar fermenting into alcohol. It is then aged in barrels in a solera system for a year.
We're telling you all this because it doesn't taste yeasty or nutty, which is a bit marmite when it comes to Sherry. It tastes like a lovely pudding wine. Serve it chilled in small measures to round off a meal.
