Description
Cuvée Evdemon is one of Matthaios Argyros' top wines, and therefore one of the finest on Santorini. It is 100% old vine (150-200 years old) Assyrtiko, from selected parcels in Pyrgos, farmed biodynamically. It is fermented in stainless steel, then 25% of the wine is aged in French oak barriques for a year, with the rest being aged for 30 months in stainless steel on its lees. The finished blend is a Santorini of stunning complexity and depth. Argyros suggests it could be cellared for 20+ years.
