A pudding wine from Malaga made from Muscat grapes. The grapes are grown 900 metres up on very steep, crumbly schist slopes - and old bush vines. The fruit is picked ripe (not with noble rot) and then partially raisined before the must is extracted via an old olive oil press. 2.5kg of fruit yields just 1 litre of must – half the yield of ‘normal’ wine. The must is then fermented at a cool temperature in steel tanks to retain freshness.
