Description

Domaine des Deux Cles Corbières Rouge is a gorgeous French red showing blueberry, black cherry, garrigue, and peppery spice. Chewy and structured, with hints of cedar, earth, and smoke on the palate. Alcoholic fermentation starts with native yeast. The Carignan and Syrah are whole berry co-fermented. Soft extraction only by pump overs with a pressing at the end of the alcoholic fermentation. Blending of the free-run juice and the pressed juice happens once the residual sugar levels are lower. The final racking of wine happens after malolactic fermentation. Bottled unfined, unfiltered, and with a minimal dose of SO2.
