The vines are over 80-years-old, giving very small yields of beautiful orange-tinged berries. Hand-harvested and placed as whole clusters in a small tank for a seven-day carbonic maceration. From the vineyard of “Perelles le Haut” in Mâcon La Roche-Vineuse, a southerly-facing, softly sloped site of alluvial limestone marl. As the grapes slowly release their juice contact with the skins and stems gives the wine a creamy, grippy palate. Pressed to old barrels for native fermentation and left on gross lees for nine months.
Creamy, touches of stonefruit, a bit nutty with a salty note. Low sulfite.
